Being a former Quark-authorized trainer myself, I was happy to discover that Quark now lets anyone download their official training materials for QuarkXPress 8. Back when I was a trainer, these materials cost $50 or so, and were available only to Quark Authorized Trainers.
Now you can download them for free at www.8.quark.com/quarked.html. Each of the 14 modules contain example files and a workbook that covers the basics as well as advanced uses.
