QuarkXPress lets you export one page as an EPS file, but version 4 and above also have a script that exports all pages as separate EPS files. Under the script-shaped menu, choose Saving> Each Page as EPS…, then choose a folder. An EPS file will be created of every page in the document and saved into that folder.
If you use File> Save Page as EPS… in QuarkXPress 7, you can also use any of your EPS Output Styles to automatically configure all the settings in the EPS export dialog. (But you’re still limited to one page at a time.)
